How to evaluate hazelnut samples for sourcing

Evaluate samples against your application and document the product description, lot information, recipe trials and acceptance criteria together.

A sample helps you understand a product and assess its suitability for your application. However, the appearance of a small quantity does not establish every characteristic of the entire delivery lot. Make the scope of sample approval clear.

Set expectations before the trial

Define product form, size, whole or broken requirements, colour and intended application. Assess flavour and colour separately for roasted products, and particle characteristics and recipe performance for ground ingredients. Record the specific requirement met rather than simply describing the sample as good.

Retain product and lot references

Record the description, arrival date and any lot reference. Clarify whether the approved sample is a product reference for future orders or a sample intended to represent a particular lot. That distinction matters at delivery acceptance.

Compare under consistent conditions

Use the same recipe, inclusion rate and processing conditions for comparative trials. Record process performance, texture and flavour observations. Trials using different recipes may not isolate the ingredient difference. Align the eventual order specification with the evaluation outcome.

Separate sensory checks from analysis

Appearance and odour checks do not replace food-safety testing. Where analysis is needed, specify the parameters, sampling approach and report's lot coverage separately. Tasting a questionable product is not a safety test.

Record the conclusion

  • Sample and product reference.
  • Trial date, recipe and processing conditions.
  • Accepted characteristics and requested adjustments.
  • Order acceptance criteria and required documents.
