The first question in hazelnut sourcing is not which product is best in general, but which form fits your application. Processing equipment, target texture and flavour, packaging and delivery plans all influence the choice.
In-shell hazelnuts are an option for buyers with suitable cracking and sorting facilities. Purchased weight is not the same as usable kernel weight. Kernel yield, sound-kernel proportion and expected processing loss should be considered together. An in-shell size specification also measures a different object from a kernel specification.
Natural hazelnut kernels have their hard shell removed and retain their thin brown skin. They can suit businesses that manage their own roasting or grinding. For whole-kernel applications, size distribution and broken-kernel requirements deserve attention. Buyers who grind the product should explain the characteristics required by their process.
For roasted hazelnuts, assess the roasting profile, colour and flavour through a sample. Blanched hazelnuts are processed to remove the thin skin. The word blanched does not by itself specify a particular roasting intensity or guarantee that every kernel has no remaining skin; agree the technical definition separately.
When purchasing hazelnut flour, ask about particle size, whether the starting material is natural or roasted, and whether fat has been reduced. These differences can affect recipe performance.
