Hazelnut size describes dimensions, not overall quality. Learn how in-shell and kernel sizing differ and what to specify when requesting a quote.
Hazelnut size grading describes the dimensions of the product. It can influence the appearance of whole kernels, portion consistency and certain processing operations. Larger does not automatically mean more suitable for every application or better in every quality dimension.
In-shell sizing concerns the nut with its shell, while kernel sizing concerns the kernel itself. Identical numbers do not make those two specifications equivalent. UNECE's kernel standard defines size using the maximum diameter of the kernel's equatorial section. The applicable specification should clarify the measurement and tolerances used in a transaction. Size consistency may matter when whole kernels remain visible in chocolate or snack products. For an ingredient that will be ground, the subsequent process, target particle distribution and recipe requirements may be more relevant than whole-kernel dimensions alone. Explain the size range your equipment accepts. Asking only for large hazelnuts does not provide a sufficiently clear basis for comparable quotations.
Moisture, foreign material, broken kernels, defective kernels and lot analysis are separate purchasing considerations. Meeting a size specification does not replace food-safety testing. Similarly, kernel yield and size are distinct factors in an in-shell purchase.
