Roasting and skin removal describe different characteristics. Clarifying them separately helps buyers communicate the product they actually require.

Natural kernels

Natural kernels have the hard shell removed and retain their thin brown skin. They may suit businesses that manage their own roasting or grinding. Size, broken-kernel requirements and lot characteristics still need a separate specification.

Roasted hazelnuts

Roasted hazelnuts have undergone heat treatment. Evaluate the roasting profile against your target flavour, colour and texture. The term roasted alone does not define a colour standard, processing duration or residual-skin proportion. Trial the sample in your own recipe: the same ingredient may be perceived differently in chocolate, dough or spread applications.

Blanched hazelnuts

The defining feature of blanched hazelnuts is removal of the thin skin. Ask separately about heat-treatment history, residual skin and roasting intensity. Requesting a lighter-looking product is not the same technical instruction as requesting a lighter roast.

Three checks before ordering

  • Appearance: What colour and residual-skin level does your application require?
  • Processing: Will you roast again, grind the product or use whole kernels?
  • Comparison: Have samples been trialled in the same recipe under comparable conditions?
